THE PINK NOTEBOOK VERDICT
Hotel Can Faustino
Opposite Ciutadella's old port, three palaces raised across the 16th, 17th and 18th centuries have been joined into a single hotel, and guests can stay in any of the three buildings, each opening onto its own view of the old town. Ask for a room in the right wing and breakfast arrives with the cathedral rising over the rooftops, 150 metres away; ask for another and the outlook runs straight down to the harbour. No two of the 56 rooms match, down to the private terraces and freestanding bathtubs in the larger suites, which suits someone who wants an address with a past rather than a template, and will frustrate anyone who wants to know precisely what they are getting before they check in. The kitchen answers to chef Matías Salvia, who sources fish from Ciutadella's own fishermen and vegetables from named Menorcan growers, then tops it up with produce from the hotel's own kitchen garden at Casa de Pau; vegetarian, vegan and gluten-free requests are handled without a fuss at breakfast and in the restaurant. There is a hammam and sauna for the slow hours, an indoor pool for the months the outdoor one is shut between November and March, and a fitness room, yoga space and diving club for anyone who wants to move instead. Families get playrooms and babysitting, couples get the terrace suites with port or cathedral views. What sets it apart from anything else in Ciutadella is straightforward: three centuries of the town's own architecture, restored rather than replicated, still slept in every night. It does not try to be a resort, and it is not pretending otherwise. Three restored palaces from the 16th to 18th centuries, joined into one hotel opposite Ciutadella's old port, with 56 rooms that share no floor plan and a restaurant built on named local fishermen and growers. It suits travellers who want history underfoot, not a template room in a chain hotel.

Faustino Gran maintains its own kitchen garden at Casa de Pau, supplying seasonal vegetables and herbs used in the restaurant's Mediterranean cuisine. Framed by Menorca's pine forests and countryside, the grounds reflect the island's agricultural heritage, linking the surrounding land directly to the dishes served at the hotel's table.
