Castilla Termal Monasterio de Valbuena
The monastery at Castilla Termal Monasterio de Valbuena was founded in 1143, and the Cistercian monks who arrived in 1151 were already planting vines and making wine, which is why the building is considered the cradle of Ribera del Duero wine. That double inheritance, wine and thermal water, still runs the place. The hotel keeps its own vineyard and organic garden, and its restaurant Converso and the Gastrobar La Cilla pour a house Crianza that has picked up international awards. The spa side draws on active pools of mineral-medicinal water, with a contrast circuit that runs through the old San Pedro Chapel, plus a hammam, sauna, steam room and indoor, outdoor and heated pools. Opened in 2015 inside the restored monastery, on the Golden Mile in the heart of Ribera del Duero, it holds 79 rooms across three floors, from compact Superior Duplex doubles to a Standard Suite nearly three times their size, and a bridal suite for anyone marrying somewhere with nine centuries of history behind them. Valladolid is 45 kilometres away, which tells you this is a destination in itself rather than a stopover; anyone wanting nightlife within walking distance should look elsewhere. Dogs are welcome for a fee, children get their own pool and playroom, and staff switch between English, Spanish and French without fuss. Spa treatments and massages need booking ahead of arrival, so this rewards planners more than the spontaneous. What sets it apart from other countryside spa hotels is that the wine and the water are not features added to old stone for effect; both trace back to the same monks, the same centuries, the same ground. A 12th-century Cistercian monastery in the heart of Ribera del Duero, rebuilt as a hotel with its own vineyard, organic garden and thermal spa pools. Book spa treatments ahead, since walk-ins are not accepted; the nine centuries of history here are the point of staying, not decoration for it.

The building dates to 1143, when Estefanía de Armengol founded the monastery later occupied by Cistercian monks who first planted vines in the region, making the site a cradle of Ribera del Duero winemaking. Its lower cloister survives as an example of the transition from Romanesque to Gothic architecture.
