This is a hidden gem in every sense of the concept. Asturias is on Spain's northern coast, a region most international visitors never reach because they turn south at Madrid or Barcelona and miss what is arguably the most beautiful and unspoiled part of the country entirely. It is a kingdom in the old sense, the first Christian territory to survive the Moorish conquest and the lineage from which the Spanish monarchy traces its roots. What it looks like is Ireland, if Ireland had better food and slightly warmer climate: ancient oak forests, emerald valleys, shaggy cows on steep mountain slopes, cliff coastline battered by the Atlantic, and a sky that changes its mind every hour. The mountains of the Picos de Europa are one of the most dramatic landscapes in Western Europe and are largely empty of tourists. The culture here is distinct from southern Spain in almost every way. The drink is cider, not wine, served in a specific ritual that UNESCO declared Intangible Cultural Heritage in 2024: the waiter raises the bottle above their head and pours it in a thin stream into a glass held at thigh level, the fall aerating the cider and giving it a brief carbonation that must be drunk immediately. This practice, called escanciado, is not a performance for tourists. It is simply what happens in a sidrería, and it will happen to you repeatedly over a long loud dinner. The food is fabada, a bean stew with chorizo and morcilla that is mountain food in its truest form, Cabrales cheese aged in caves in the Picos, and seafood that comes in from the Cantabrian Sea and arrives at the table the same day. The people are warmer and more forthcoming than in most of Spain, and genuinely pleased to see you, partly because international visitors are still genuinely rare here. Solo Palacio sits in the village of Llanuces, in the Las Ubiñas Natural Park, forty minutes south of Oviedo. It is a 15th-century manor house registered in the Asturian heritage inventory, walled, deeply private, and surrounded by the kind of mountain and forest landscape that makes it very easy to lose track of time. The owners have restored it according to a wabi-sabi philosophy, the Japanese concept of finding beauty in imperfection and impermanence, which in practice means exposed stone walls, original beamed ceilings, antique carved doors, natural materials, and a deliberate absence of the kind of polished perfection that makes a hotel feel like a set. There are eleven apartments across the main house and various outbuildings of different ages, each one combining antique European pieces with Asian objects in a way that feels considered rather than eclectic. Freestanding bathtubs, fireplaces, premium linens, underfloor heating. The infinity pool looks out over the valley and the forested peaks. The sauna and jacuzzi are available year-round. Solo Palacio operates as a non-profit, which is unusual enough to be worth saying plainly. After costs and taxes, eleven cents of every euro spent goes back into local community and conservation projects, including a carbon capture initiative, plans to rehome local stray dogs, and recycling infrastructure for the nearby village whose total population is in the teens. The host grew up in Asturias, worked in hospitality internationally, and returned to build something genuinely rooted in the place. The restaurant, Solo Bistró, cooks Asturian food with a particular focus on local mushrooms, served with craft beers and wines from the nearby Cangas de Onís cellars. The second-largest cave in Europe is a short drive away and can be visited with a professional archaeologist the hotel will arrange. Horseback riding through the natural park, guided meditation, tea ceremonies, and Land Rover tours of the estate are all available if you want them, and completely avoidable if you don't. The people who come here are the ones who find the idea of a UNESCO-listed ritual pour of freshly made cider in a mountain village more exciting than a beach club. They tend to be curious, unhurried, and unbothered by the absence of a spa menu. They have usually already done the obvious and are now doing the interesting.
