Cliff House Hotel
Cliff House Hotel is built into the rock on the south side of Ardmore Bay, above a fishing village that has worked this stretch of Ireland's Copper Coast for centuries. Just 39 rooms sit across three floors, and nearly every one faces the Atlantic, many with balconies or terraces looking straight down on the water. What sets it apart from other coastal hotels in this class is HOUSE Restaurant, a Michelin-starred kitchen inside a hotel this small, run alongside the more relaxed Oceanfront Bar and Restaurant for guests who want dinner without ceremony. The Well by the Sea Spa handles the slower hours, with a heated indoor pool, sauna, steam room and treatment rooms, and outside there is fishing, cycling, hiking the Ardmore Cliff Walk, and a golf course within three kilometres for anyone who wants to leave the grounds. A member of Relais & Chateaux, the hotel reads like a serious food-and-wine address that happens to have exceptional rooms rather than the reverse, suiting a couple planning around one big dinner more than a family filling a week of afternoons, though interconnecting rooms and a playroom keep children from being an afterthought. Staff work in English, French, German and Spanish, and the hotel sits an hour from Cork and Waterford airports, two from Rosslare, with Dungarvan and the Waterford Greenway close enough for a day trip. The bay outside the window still feels like the point of coming. Extra beds run 70 EUR a night. Anyone wanting nightlife or a town to wander after dinner should look toward Cork city; this is for people happy to stay put and let the tide do the entertaining. A 39-room cliffside hotel above Ardmore Bay with a Michelin-starred restaurant few hotels this size can claim, a spa, an indoor pool, and sea-facing rooms with balconies. It suits a couple built around one serious dinner more than a family after nonstop activity, though a playroom keeps children covered too.

Cliff House Hotel is built into the rock above Ardmore Bay, appearing almost to defy gravity as it clings to the cliffside on the edge of the historic fishing village of Ardmore. Sun-drenched terraces and sea-facing rooms look out over golden sands, lobster pots and dolphins playing in the water below.
