THE PINK NOTEBOOK VERDICT
Hotel Spa Relais & Chateaux A Quinta da Auga
A Quinta da Auga sits on the banks of the River Sar in Santiago de Compostela, in a building that started as an eighteenth-century paper mill, then became a cloth mill, a sawmill, and finally a brewery before architect Luisa García Gil and her husband spent six years turning it into a 51-room hotel. The water that once ran the machinery still sets the tone: the top-floor spa, built under a glass roof with windows onto the Galician forest, takes guests through a jet pool, sauna, steam bath, ice cabin and indoor pool, and includes a Dead Sea flotation tank, a rarity even among spa hotels of this size. Filigrana, the restaurant, turns Atlantic fish and mountain produce into a Galician menu under chef Federico López Arcay, though it closes Sunday evenings and all day Monday, worth building around if dinner matters. Rooms carry bathrobes, minibars and soundproofing as standard. The property sits three kilometres from the city centre and lies directly on the Camino de Santiago, so bicycle storage and hiking routes are part of daily operations rather than an afterthought. Spa access stops at sixteen, which says plainly who this is for: travellers wanting quiet over splash, not families booking a pool holiday. Pets travel for a fee, and the event rooms scale from small private meetings to gatherings of three hundred, suiting a wedding party as easily as two people avoiding one. By its own account this was the first eco-hotel built in Spain, a claim that shows less in slogans than in the pace of the place. The river outside hasn't stopped running since the eighteenth century. Neither, really, has the point of coming here. An eighteenth-century paper mill on the River Sar, rebuilt over six years into a 51-room Relais & Châteaux hotel with a glass-roofed spa and a Dead Sea flotation tank. Filigrana serves Galician cooking under chef Federico López Arcay, and spa access starts at sixteen, so this suits quiet over splash.

The building housing A Quinta da Auga began as an 18th-century paper mill powered by the River Sar, later serving as a cloth factory, sawmill, and brewery before its restoration. Architect and owner Luisa García Gil spent six years leading the renovation, preserving original stone and structure while transforming the industrial ruin into today's hotel.
