THE PINK NOTEBOOK VERDICT
Cavalta Boutique Hotel
Cavalta Boutique Hotel occupies a restored 1925 manor house in Triana, the Seville neighbourhood known as the cradle of flamenco, craft and the city's most authentic cooking, where the original balconies, hand-painted tiles and ceramic work have been kept rather than replaced. There are only twelve rooms, ranging from a compact 323 square feet up to a 484-square-foot suite, each fitted with memory-foam beds, down comforters, a minibar and a Smart television, and bathrooms with rainfall showerheads. A rooftop pool looks out over Triana's terracotta roofs, better suited to an evening drink than to laps. What separates Cavalta from the other boutique addresses in town is its kitchen: the hotel restaurant has earned two Repsol Suns, in 2024 and 2025, and has appeared in the Michelin Guide three years running, from 2023 through 2025, which means serious cooking happens inside the building rather than down the street. Triana's ceramic workshops, its market and its bridge sit within a few hundred metres, and the cathedral and Torre del Oro are a short walk across the river. This suits a couple or a solo traveller who wants to eat well and sleep somewhere with history behind the walls, who has no need of a gym or a lobby full of strangers, and who is content with twelve rooms rather than two hundred. It will frustrate anyone travelling as part of a large group, since there is no scale here, and anyone chasing anonymity, since a twelve-room house tends to know its guests by the second morning. Pets travel for a flat fifty-euro fee. Come down from the roof for dinner. That is the reason to stay. Twelve rooms in a restored 1925 Triana mansion, a rooftop pool over the neighbourhood's terracotta roofs, and a restaurant carrying two Repsol Suns and three consecutive years in the Michelin Guide. This suits someone who wants to eat well and sleep somewhere small, not a group needing scale or anonymity.
