THE PINK NOTEBOOK VERDICT
Perivolas
Perivolas began as a family home. In the late 1950s, Manos Psychas, a naval officer with ancestral roots on the island, found his family's cave house in ruins after the earthquake that had emptied much of Santorini, and began restoring it, slowly, without a hotel in mind. The twenty-two cave houses that now make up the property carry that origin without apology, each one different from the next, built by native craftsmen using local materials, with the organic curves and sculpted stone walls and sleeping alcoves of Cycladic architecture at its least performative. There are no televisions. The infinity pool runs directly into the Aegean horizon on a black stone terrace, and it is, by reasonable consensus, one of the better pools in Greece. The restaurant occupies a converted wine cellar and serves contemporary Greek cuisine to residents only, candlelit, with the caldera visible beyond. The Psychas family once traded Santorinian wine with Odessa, a detail the property wears lightly and that explains the wine list's particular seriousness. The wellness studio sits above the terrace with views that make exercise feel, for once, like a reasonable use of time. This is a hotel that does not need to announce itself. The guests who suit it best are the ones who find the absence of televisions clarifying rather than inconvenient, who will spend three days reading beside the pool and consider this an unqualified success, and who understand that adults-only is less a policy than a statement of intent. Short version: Twenty-two cave houses carved into the Oia cliff by the family that has owned them since the 1950s, with a residents-only wine-cellar restaurant and an infinity pool that drops directly into the Aegean. Understated in the way that only comes from not needing to try.
