At Les Bains Gardians, flamingos and herons fish in the étangs while Camargue horses graze along the water's edge, a view that belongs to the traditional mas anchoring this four-hectare domain inside the Camargue Regional Natural Park, on the edge of the Mediterranean coast near Les Saintes-Maries-de-la-Mer. Of the 67 rooms, roughly fifty are authentic Cabanes de Gardian, the traditional huts once used by the region's horsemen, rebuilt with interiors by the design duo Hauvette & Madani; the remaining rooms sit in the mas itself, some looking out over the lagoons. A resident riding school runs two-hour excursions on Camargue horses across the marshes and wild beaches, with ponies for children and carriage rides along the water for those who'd rather watch than ride. Two outdoor pools, tennis, table tennis and bocce cover the active hours; an intimate spa with limited daily slots handles yoga, breathwork and meditation for those who'd rather not. Chef Johanna Laporte runs Le Pont des Bannes, a regional institution turned short-circuit Mediterranean kitchen, with poolside lunches in summer, fireside dinners in winter, gipsy concerts and a Sunday brunch built around a seafood station and fresh pasta. An ongoing artist-in-residence programme puts contemporary work on the walls of the restaurant, the reception and some of the 67 rooms themselves, a detail no comparable Camargue address can claim. This suits riders, slow travelers and anyone who prefers wild landscapes to polished ones; it will frustrate guests who want to step straight onto sand, since the beach in town is a two-kilometre drive, or who expect a conventional treatment-menu spa. What stays with you is the horses at dusk, unbothered by any of it. A four-hectare Camargue domain built mostly from traditional Cabanes de Gardian, with a riding school that crosses the marshes and wild beaches most hotels only photograph.
