THE PINK NOTEBOOK VERDICT
Jackalope Hotel
At Doot Doot Doot, the hotel's restaurant, 10,000 bulbs hang overhead in a chandelier that lights the seasonal menu, setting the tone for Jackalope Hotel before a guest has even reached their room. Set among the vines of Merricks North on the Mornington Peninsula, within walking distance of Willow Creek Vineyard and the Royal Botanic Gardens, the hotel is small by design: 45 rooms across two floors, a scale that keeps the 30-metre infinity pool and heated spa feeling private rather than public. Rooms run from a compact 409 square feet to a 915-square-foot Standard King Suite, several with their own terrace, each with a private bathroom and proper toiletries. What sets Jackalope apart from the cellar-door hotels around it is the art: a privately owned collection that includes work by Rick Owens, Tracey Emin, Rolf Sachs and Tatsuo Miyajima, woven through the building as a deliberate, alchemy-themed narrative rather than hung as decoration. The architecture argues the same point, bold and monolithic against a landscape of traditional vineyard cottages, built to be out of place. Guests who want a quiet countryside inn with weathered calm should look elsewhere; this suits people who want their wine trip to come with a wagyu bresaola tasting menu, a hatted lunch at Rare Hare, and something to argue about over dinner. Spa treatments need booking ahead, pets aren't allowed, and with only two floors there's no view above the vines, but there's also nowhere to hide from the design. Free parking and a concierge cover the practical end. It is a hotel with an opinion, and it does not apologise for it. Jackalope Hotel is a 45-room, two-floor statement on the Mornington Peninsula, built bold and monolithic against a landscape of traditional vineyards. It suits travellers who want a privately owned art collection, a 30-metre infinity pool and a hatted restaurant with their wine, not those seeking a quiet countryside inn.

Your taste already has an address

Jackalope's design follows an invented alchemical narrative, with distinct guest spaces representing stages like distillation and crystallisation. The privately owned collection on display includes works by Rick Owens, Tracey Emin, Emily Floyd and Rolf Sachs, whose large-scale light installation of chemistry apparatus greets guests at the entrance to Flaggerdoot.
A private library and garden are set within the grounds.
Contactless check-in and check-out are offered.
