THE PINK NOTEBOOK VERDICT
Les Frres Ibarboure - Table & Hostellerie
At Les Frères Ibarboure, days tend to run to two fixed points: a swim in the heated outdoor pool set among the pines, and dinner at the one-star Michelin restaurant where brothers Xabi and Patrice Ibarboure, the third generation to run this Bidart house, still divide the menu between savoury and pastry themselves. That pairing, a twelve-room hotel built around a starred kitchen, is the one thing here that most addresses on this stretch of the Basque coast do not have. The property sits on a two-hectare wooded park at the edge of the forest, between Biarritz and Saint-Jean-de-Luz, a few kilometres from the ocean and the beach at Bidart rather than beside it. Rooms run from 38 to 55 square metres, with air conditioning, soundproofing, and balconies that look over the pool or the garden. There is a sauna, a massage room and a spa for the slow mornings, a billiard table and a wood stove for the evenings, and a staff that switches easily between English, French, Spanish and Russian. Dogs travel with their owners for a small fee, and a playroom and babysitting are on hand for the families who bring children. But the house describes itself as a haven for resourcing, and the scale, spa, and restaurant all point the same way: this favours people who came to eat and recover, not to fill a schedule. It will not suit anyone chasing a big resort's buzz or a beach at the front door; the sea here is a short drive, not a stroll. What stays with you afterwards is the kitchen, not the amenities list. A twelve-room hotel in Bidart built around a one-star Michelin restaurant run by two brothers, with a heated pool, spa and two hectares of forest between Biarritz and Saint-Jean-de-Luz. It suits people who came to eat and recuperate, not to be by the water instantly.
