THE PINK NOTEBOOK VERDICT
Fleur de Loire
Fleur de Loire occupies a 17th-century hospice on the left bank of the Loire in Blois, close enough to the Château de Blois and Saint-Louis Cathedral to reach on foot, with a terrace that faces the river instead of a street. What separates it from other converted heritage hotels along the valley is Christophe Hay, who cooks at two restaurants on site, a formal dining room and the more relaxed Amour Blanc, using fruit and vegetables from his own garden; his kitchen holds two Michelin stars for 2026. The 44 rooms, spread across two wings, come with desks, kettles, minibars, safes and walk-in showers or tubs, some opening onto terraces or looking over the river and town, and stocked with toiletries from Savonnerie de Muides and Sisley. A tablet paired with a Bose speaker pulls in Netflix, Deezer and Spotify, one of the few overtly modern touches inside walls that started as a hospice. Downstairs, the Sisley Spa runs plant-based treatments beside an indoor pool, and a fitness studio offers Champion Spirit classes before breakfast. Connecting rooms, baby cots, highchairs and baby-sitting are arranged on request, and dogs travel for a fee per stay. This suits couples building a trip around dinner and families who want their children looked after without leaving the building. It suits less anyone hoping for anonymity; here, the chef's name is on the door and the cooking is the point of staying. Two hours from Paris, with Blois's train station less than five kilometers away, it gives travelers a serious reason to stop moving through the Loire Valley and settle in one place for a few nights. A 17th-century hospice on the Loire in Blois, built around chef Christophe Hay's two Michelin-starred kitchen and his own vegetable garden. Forty-four rooms, a Sisley spa and an indoor pool, best suited to travelers who plan a stay around dinner rather than disappearing into a crowd.
