THE PINK NOTEBOOK VERDICT
La Chapelle Saint - Martin Relais & Chateaux
At La Chapelle Saint-Martin, dinner starts at 7:30 in the evening, in one of four elegant rooms that open onto a park of centuries-old trees, and the man cooking it has held his Michelin star since 1986 and still owns the house. That continuity, chef and owner unchanged for four decades, is what separates this Relais & Chateaux property in Nieul from other countryside hotels with a restaurant attached: here the kitchen is the reason for the address, not an amenity beside it. The building holds only fourteen rooms across two floors, so nobody gets lost in a corridor, and the garden, outdoor pool, and picnic area keep the pace slow between meals. Guests who want to move can rent bicycles, including the property's own electric ones, and ride out through the Limousin countryside toward Palais des Sports de Beaublanc or the University of Limoges. Pets are welcome for a small fee, tennis courts and a children's playground sit on site, and staff switch between English, French, German, and Spanish without pausing. Rooms run from a Superior King at 215 square feet to a Luxury King Suite with its own terrace at 645, so comfort differs sharply between categories. Airport transfers cost 80 euros each way, and an extra bed for a child adds 30 euros a night, so this is not the property for travelers counting every euro. It is also not for anyone hoping for nightlife or a big group; fourteen rooms and one dining room set the ceiling on both. For a couple or a small party planning their days around what the kitchen sends out, there is little reason to look past Nieul. A fourteen-room Relais & Chateaux house in Nieul where the owner has cooked under a Michelin star since 1986. Expect a slow park, an outdoor pool, and dinner as the main event, not a side one. Skip it if you want nightlife or a crowd.

THE PINK NOTEBOOK VERDICT

Your taste already has an address

Behind its 19th-century manor façade, La Chapelle Saint Martin has been shaped by Chef Gilles Dudognon, who returned in 1997 to take over as owner after earning his first Michelin star in 1986. The property recently marked forty years since that star was awarded, celebrating the milestone throughout the year.
