THE PINK NOTEBOOK VERDICT
Hôtel de Pavie
Coffee on the raised terrace at Hôtel de Pavie looks out over the tiled rooftops of medieval Saint-Émilion, and beyond them the vines of Château Pavie, the Premier Grand Cru Classé "A" estate that owns this address. That connection is the hotel's real distinction. Guests can book a preferential-rate visit to the château and be driven there in the hotel's own car, then return for dinner at La Table de Pavie, a two-Michelin-starred restaurant where chef Yannick Alléno works Bordeaux classics like garbure and lamprey into a modern menu built around the estate's wines. The hotel itself is small and deliberately domestic: 17 rooms and suites spread across three connected houses, the newest a converted 18th-century trading house added in 2022, decorated throughout by Alberto Pinto in a style that favours old stone over polish. Rooms carry minibars, flat-screen televisions, and separate bathtub-and-shower bathrooms rather than statement design flourishes. Downstairs, a wood-and-stone bar opens onto a garden through a glass roof, useful on the grey days Bordeaux gets more of than its wine list suggests. A concierge team arranges vineyard visits, transfers, and the underground tour of the village's monolithic church, and valet parking solves the practical headache of driving into a medieval village built on cobbled streets. This suits travellers who want wine and gastronomy at the centre of a stay, and who don't mind a compact, staircase-heavy house over a sprawling resort. It will feel confining to anyone who wants a pool, a spa floor, or anonymity among strangers. What stays with you is the terrace at dusk, the village lit below, a glass of Saint-Émilion in hand. Hôtel de Pavie sits inside Saint-Émilion's walls, owned by the Premier Grand Cru Classé "A" estate visible from its terrace. Seventeen rooms, a two-Michelin-starred restaurant, and château visits come standard. Skip it if you want a pool over a wine list.

THE PINK NOTEBOOK VERDICT

Your taste already has an address

To preserve the hotel's home-like character across its historic houses, the Perse family entrusted the decor to interior architect Alberto Pinto, known for balancing historical styles with contemporary creations. His treatment of the rooms and suites mixes rich materials, considered object choices and colour, handled with the care of a private residence rather than a formula.
