THE PINK NOTEBOOK VERDICT
Domaine de Rymska
At Domaine de Rymska, in the Burgundy village of Saint-Jean-de-Trézy, the cattle that graze the estate's 80 hectares supply the kitchen of La Table de Rymska, where chef Jérémie Muller cooks Wagyu and Charolais beef raised a few hundred metres from the dining room. That closed loop between farm and plate, along with a working stud farm of purebred mares, is what separates this Relais & Châteaux property from other countryside retreats with a similar list of comforts: a spa built around wood and stone with sauna, hammam and jacuzzi, an outdoor heated pool, gardens, a terrace bordered with aromatic plants, and rooms named after the prize animals bred here. The restaurant held onto its Michelin Key for a second year running, a signal that the kitchen is doing something more deliberate than farm-to-table as decoration. Thirty kilometres from Beaune, the estate is close enough for a day trip to the châteaux of Couches, Germolles and La Rochepot, or the UNESCO-listed vineyard climates, yet far enough that the nights are as quiet and starry as the estate promises. There is no lift, though staff carry bags for you, worth flagging for anyone who struggles with stairs. This suits couples and food-focused travellers who want a slow few days built around a table, a farm walk and a treatment room, not those chasing a lively pool scene or a walkable town centre. It is a place built around what it grows and raises, not around a brand. Domaine de Rymska in Saint-Jean-de-Trézy runs its own farm, supplying Wagyu and Charolais beef to a restaurant that has kept its Michelin Key two years running. Thirty kilometres from Beaune, the 80-hectare estate offers a spa, an outdoor pool and rooms named after its prize animals.

On the estate's 80 hectares, a working farm and stud farm raise Charolais and Wagyu cattle, Mangalitsa pigs, lambs, goats and poultry alongside purebred mares and foals. Guests can visit the farm and stables to see the animal husbandry that supplies much of the restaurant's produce.
