THE PINK NOTEBOOK VERDICT
Kapsaliana Village Hotel Ξενοδοχείο
In the hills above Rethymno, a mill that once pressed the oil for Arkadi Monastery stood empty from 1955 until an architect found seven people still living beside its stone presses and spent years turning the surrounding houses into what is now Kapsaliana Village Hotel. The result is a small settlement rather than a single building, workers' cottages and the old mill itself kept in view, holding 25 air-conditioned rooms and suites among olive groves, with a garden, terrace and pool set into the landscape. Rooms carry COCO-MAT beds, Nespresso machines and OLIVE ERA toiletries, and several open onto sea views across the treetops, the coast visible but not at hand, given the hotel's place in the mountains above the coastline. Elaia Restaurant works from Cretan recipes and homegrown produce, while Lemonies Cocktail Bar and the poolside Levanda keep evenings unhurried. A library and a picnic area suit slow mornings more than packed itineraries, and concierge staff, 24-hour reception, laundry and babysitting cover the practical ground without fuss. This is not the choice for anyone who wants to fall out of bed onto sand or into a party. It rewards guests who want history sitting alongside comfort, an actual olive mill built in 1763 for Arkadi Monastery and later restored, now a member of Historic Hotels Europe. Fitness facilities and free parking are on hand, and Nikos Kazantzakis Airport is a short drive away. What few hotels can claim is a hall of stone presses left standing rather than staged, machinery that ran until 1955, not a design flourish. Guests leave less rested than reoriented, having stayed somewhere that remembers what it used to be. A restored 18th-century olive mill built for Arkadi Monastery, now 25 rooms and suites spread through a hillside settlement above Rethymno, with a Cretan-recipe restaurant and mill machinery left in place rather than staged. This isn't a beach-at-the-door hotel, and it isn't trying to be.

Levanda, named after the Greek word for lavender, is the hotel's pool and snack bar. It sits beside the main swimming pool, offering casual refreshments through the day, and complements the nearby Lemonies Cocktail Bar among the blooming lemon trees for guests who prefer a sunset drink or a nightcap under the stars.
