THE PINK NOTEBOOK VERDICT
Cavalta Boutique Hotel
In Triana, the Seville neighbourhood where flamenco was born and balconies still carry the sound of everyday conversation, a manor house built in 1925 by Cristóbal Losana Andrés has been carefully restored, keeping its original balconies and tiles. Cavalta Boutique Hotel keeps just twelve rooms, each with a private bathroom, minibar and toiletries, so a stay here feels closer to a private Sevillian house than a hotel. What sets it apart from the city's other small boutique addresses is its restaurant, run under the Balbuena y Huertas name: it has held two Repsol Suns in 2024 and 2025 and appeared in the Michelin Guide three years running, a level of kitchen rarely attached to a twelve-room hotel. Upstairs, a rooftop pool looks out over Triana's rooftops, a quiet spot for a drink after a day spent walking to the Triana Ceramic Center or across the bridge into the old town. The practicals are covered too: 24-hour reception, concierge, airport transfer, dry-cleaning, wheelchair access, and pets allowed for a fee. This suits travellers who want to eat seriously and stay somewhere with a real history behind it more than it suits large families or groups looking for extensive leisure facilities, since babysitting is the only concession to children and there is no separate kids' club or spa. With only twelve rooms, the whole house can also be booked out for a private celebration, which is not something most Seville hotels can offer. It closes the day the way Triana itself does: unhurried, and better with something good on the plate. A restored 1925 Triana manor house with just twelve rooms, a rooftop pool over the tiled roofs, and a kitchen that has held two Repsol Suns and three straight years in the Michelin Guide. It suits travellers who want to eat well more than those chasing big leisure facilities.

THE PINK NOTEBOOK VERDICT

Your taste already has an address

Built in 1925 by Cristóbal Losana Andrés and designed by Ramón Balbuena y Huertas, a master of Andalusian regionalism, the building was once one of Triana's great family homes. Careful restoration preserved its original balconies, ceramics and azulejo tiles, turning the stately house into a twelve-room boutique hotel that still carries the neighbourhood's history in its walls.
The in-house restaurant serves Andalusian-rooted cuisine recognised in the Michelin Guide and with two Repsol Suns.
Pets are welcome for an additional fee.
Babysitting and childcare can be arranged.
