THE PINK NOTEBOOK VERDICT
Hotel Mercer Sevilla
Hotel Mercer Sevilla occupies a converted 19th-century mansion, Casa Palacio Castelar, in El Arenal, beside the Real Maestranza bullring and a short walk from Plaza Nueva and the Opera theatre. Only eleven rooms sit across two floors, opened in 2016, yet the property still fits in an indoor pool, an outdoor pool, a rooftop terrace and a garden, a combination rarely found in a hotel this size. Breakfast is cooked to order between 8 and 10:30 each morning, and dinner happens in María Luisa, an intimate restaurant built for about eighteen covers, which suits someone after a considered plate rather than a buffet spread. The concierge desk arranges flamenco classes, night walks through Santa Cruz, and visits to Triana's ceramic workshops, useful for a traveller who wants Seville explained rather than handed a map. Multilingual staff, in English, Spanish, Italian, German and French, and a 24-hour reception suit a solo traveller or couple landing late off an airport transfer, less so a family chasing kids' clubs or a group needing block bookings, since an extra bed costs 100 EUR a night and self-parking runs 60 EUR a day. What separates it from the neighbourhood's other boutique conversions is the Michelin Key it earned in 2025, recognition for restraint and service rather than scale. Rooms come with bathrobes, a Nespresso machine and Egyptian cotton linen, comforts that matter less, in the end, than the address itself: a nineteenth-century mansion two minutes from the bullring, in a district Cervantes and Lope de Vega once frequented. Eleven rooms in a converted 19th-century mansion beside Seville's bullring, with an indoor and outdoor pool rarely found at this scale. Earned a Michelin Key in 2025 for its restraint rather than its size. Better suited to a couple than a family chasing kids' clubs.
