THE PINK NOTEBOOK VERDICT
Greywalls Hotel & Chez Roux Restaurant
Greywalls was built in 1901 as a holiday home for keen golfer Alfred Lyttelton, positioned, as the description goes, within a mashie-niblick shot of the eighteenth green at Muirfield. Sir Edwin Lutyens designed the honey-stone house around six acres of walled garden, half an hour from Edinburgh and a three-minute drive from Gullane Golf Course. Golf draws many guests, but the reason to stay is Chez Roux, the dining room built on Albert Roux's Michelin-trained techniques: a three-course dinner of rabbit ballotine, Highland salmon or roasted venison runs to a dessert trolley worth lingering over, and afternoon tea brings scones with his own jam and clotted cream, a pot of Ronnefeldt tea or a glass of Albert Roux's Blanc de Blanc. Live piano fills the bar on Friday and Saturday evenings, and Sunday lunch is roast sirloin of Scotch beef with Yorkshire pudding. The 23 rooms, spread across two floors and individually decorated, keep deep soaking bathtubs, cable TV and log fires. Pets travel with you for a modest fee. None of this suits anyone wanting a swimming pool, a lively strip of bars, or a big anonymous lobby; this is a small country house built for golf, gardens and a quiet dining room, with a library for evenings that don't involve either. Golfers extending a Muirfield round into dinner, and wedding parties booking exclusive use of the whole house, will get more from it than someone chasing resort-style amenities. Greywalls closes later this year for a full refurbishment, so a stay now is a stay in the house Lutyens actually built, before any of it changes. Built in 1901 within a mashie-niblick shot of Muirfield's eighteenth green, Greywalls pairs Lutyens architecture with Albert Roux's kitchen at Chez Roux. The 23-room country house suits golfers and small wedding parties more than pool-seekers, and closes later this year for a full refurbishment.
