San Sebastián is a small coastal city of about 187,000 people on the Bay of Biscay, twelve miles from the French border, and it has more Michelin-starred restaurants per capita than anywhere else in the world. Within a twenty-five kilometre radius of the city hall there are nineteen Michelin stars, including three restaurants with three stars each: Arzak, Akelarre, and Martín Berasategui. The food culture is built around pintxos, elaborate small bites served in bars across the old town where the ritual is to eat one or two at each stop before moving on to the next, standing up, napkins on the floor, no menus and nothing written down. The gilda, an olive, an anchovy, and a pickled pepper on a toothpick, is the original pintxo, invented here in 1947, and still the most honest version of what the city does. La Concha beach curves around the bay in a perfect arc. The city is fashionable, genuinely food-obsessed, and worth more time than most people give it. Heredad de Unanue offers a completely different way into San Sebastián than the city-centre hotels. It sits in the green belt just outside Donostia, on a narrow country lane in rolling countryside, ten minutes by taxi or three train stops from the old town, and the difference in register is total. The building dates to the late 15th and early 16th centuries, has been in the same family for five or six generations, served as a military hospital during the Carlist Wars, and burned almost entirely to the ground in 2003. It was rebuilt and opened as a hotel in 2018 by the two sisters whose family has owned it throughout, and the result is a property with eleven rooms, each one different, each one named after a trade connected to the Basque diaspora, the shepherds who went to Oregon, the bakers who went to Chile, the pelota players who went to Argentina. The rooms themselves mix exposed stone, warm wood, glass-enclosed bathrooms and contemporary design in a way that feels layered rather than decorated. The breakfasts use fruit from the hotel's own orchard. The terrace looks out over the garden and the surrounding hills. The chef Xaxa spent three decades in professional kitchens, earned a Michelin star earlier in his career, and now cooks exclusively for hotel guests, serving a tasting menu that guests describe as everything you would expect from a chef at that level, without any of the formality or distance. He describes himself now simply as a family cook. The tasting menu is not available every evening, which makes it worth asking about when booking. The owners, the two sisters who run the property with a warmth that runs through every review it has ever received, are themselves something the hotel could not be replicated without. This is for the person who wants to eat their way through one of the world's great food cities and come home each evening to somewhere that feels like it was built for staying in, not just sleeping in. The short version: An eleven-room 15th-century farmhouse in the San Sebastián countryside, ten minutes from the old town, owned and run by two sisters whose family has lived here for generations. Rooms named after Basque diaspora trades, fruit from the orchard at breakfast, and a tasting menu by former Michelin-starred chef Xaxa cooked exclusively for guests.
