San Sebastián is already in the collection twice, and if you have read those descriptions you know about the Michelin star density, the pintxos culture, La Concha beach, and what makes this particular corner of the Basque coast one of the most compelling food destinations in Europe. What those descriptions don't cover is Monte Igeldo, the coastal headland that closes the western end of the bay, ten minutes by car from the city centre and a world away from it in character. The hillside drops steeply to the Cantabrian Sea, the coastline running west toward the harbours of Orio and Getaria, and on a clear day the French Basque coast is visible from the terraces. It is a dramatic and genuinely isolated position, the kind of cliff-edge site that makes everything that faces it feel consequential. Pedro Subijana opened his restaurant here in 1974, on a site whose name, Akelarre, means witches' coven in Basque. It held two Michelin stars for twenty-five years, earned its third in 2007, and has kept them since. Subijana is one of the founding figures of the new Basque cuisine movement, the generation that in the 1970s began to reimagine what Basque cooking could be, and his restaurant has been a pilgrimage destination for serious food travellers for decades. In 2017 he built a hotel around it, and the result is one of the more considered examples of the chef-hotel genre anywhere in Spain: twenty-two rooms and two suites, all of them with unobstructed sea views, designed by Madrid architects Mecanismo with the same sensibility as the cooking, the best raw materials, black marble, pale oak, filitia stone, assembled with precision and restraint. The smallest rooms are 45 square metres. The two suites have private stone-lined plunge pools positioned so that the water appears to merge with the Cantabrian Sea on the horizon. Every room has floor-to-ceiling windows and a Bang & Olufsen sound system. The spa, 800 square metres, looks directly over the water. There are two restaurants. The three-Michelin-star Akelarre serves Subijana's tasting menu, which requires a separate reservation and is not guaranteed by a room booking, a detail worth knowing before you arrive. Oteiza, the second restaurant, is more accessible and handles breakfast and a shorter, more traditional Basque menu throughout the day. A reservation at Akelarre the restaurant is one of the more difficult tables in Spain to secure, and staying in the hotel is one of the better arguments for trying. The guests are those for whom this specific combination, a three-Michelin-star meal in a hotel where every room has that view, is the entire trip. It is not a city hotel. You will need a car or a taxi to reach the centre of San Sebastián, and the hotel runs a shuttle. But the city's restaurants and beaches are ten minutes away, and the combination of returning to this hilltop in the evening makes the distance feel like an advantage rather than a compromise.
