Opposite the Vienna State Opera on Philharmonikerstraße, on the site of the old Kärntnertortheater, the Hotel Sacher opened in 1876 as the Hôtel de l'Opéra, the creation of Eduard Sacher, son of Franz Sacher, the confectioner's apprentice who invented the Sachertorte in 1832 on a commission from Prince Metternich's kitchen. Eduard died in 1892, and his widow Anna, twenty one when she married him and famous within a decade for smoking cigars in the lobby and keeping a retinue of French bulldogs, ran the hotel for the next four decades and turned it into the meeting point for the Habsburg court, the diplomatic corps and the Vienna Opera crowd. The Gürtler family bought the hotel in 1934 and has run it since, the only privately owned, family run five star hotel left in Vienna, now under the fourth generation, siblings Georg Gürtler and Alexandra Winkler. The 152 rooms and suites keep to a fairly consistent register of red damask, Biedermeier furniture, marble bathrooms and gilt framed art, the kind of interior that has not been redesigned so much as maintained, floor by floor, since the last major refurbishment finished in 2012. Two additional floors, added in 2005 with a spa on top, were designed by Pierre Yves Rochon in a lighter, cooler palette of red and blue that the hotel itself calls Sacher light, a deliberate departure from the ground floor's imperial density. Downstairs, the Rote Bar serves Austrian classics under crystal chandeliers, the Blaue Bar does cocktails at night, and Café Sacher still produces the Original Sacher Torte from a recipe the hotel spent decades in litigation with Demel to protect, the apricot jam thin, the chocolate glaze matte rather than glossy, served with unsweetened whipped cream as a matter of house doctrine. Staying here feels less like checking into a hotel than being absorbed into an institution that predates you and will outlast you, the staff formal without being cold, the rhythm of the place set by the Opera's own calendar of matinees and evening performances across the street. It suits people who want ceremony done properly, the linen ironed a certain way, breakfast served rather than assembled, a concierge who can get a box at the Opera on short notice because the hotel has been doing exactly that since Anna Sacher's time. It is not a place that tries to surprise you, and it does not want to. You should not come if you want a boutique discovery, anonymity, or interiors with any restraint, the ground floor rooms in particular read as more red damask than most contemporary tastes will want, and the Café Sacher terrace at Torte hour is thick with tour groups rather than the discreet clientele the upstairs suites imply. You should come for the specific, hard to replicate thing the Sacher does have, continuity: four generations of one family, a cake made to one unchanged recipe, and a location that puts you at the stage door of one of the world's great opera houses.
