THE PINK NOTEBOOK VERDICT
Hotel Klosterbrau
Seefeld is the Austrian Alps at their most quietly confident: a small town on a plateau at 1,200 metres, ringed by the Karwendel and Wetterstein ranges, with a pedestrian centre, a casino, cross-country trails that have hosted two Winter Olympics, and the particular ease of a place that has been welcoming visitors for long enough to do it without effort. Hotel Klosterbräu is at the heart of it, a former 16th-century monastery that has been in the Seyrling family for over two hundred years and run as a hotel since the building ceased to be a place of religious life. The vaulted ceilings, stone columns, and thick walls are all original, and the accumulated detail of six generations of ownership, the antiques, the fireplaces, the 500 glowing candles lit every evening throughout the building, gives the place a warmth that newer hotels spend considerable money trying to replicate. The 90 rooms and suites are individually styled across the monastery's various wings, each with its own character, and the Loft 500 suite, with its private sauna and 70-square-metre balcony overlooking the garden, is the most ambitious room in the building. The Spiritual Spa runs to 3,500 square metres, eight saunas, an outdoor pool, a rooftop pool with panoramic mountain views, and a treatment menu built around local alpine plants and herbs. The nine dining locations range from the main restaurant with its regional Tyrolean menu to the Bräukeller Grill for steaks and Tyrolean tapas, to dinner in the 500-year-old wine cellar, which is the most atmospheric room in which to eat in Seefeld. The hotel's own vegetarian farm supplies the kitchen, and the brew that once gave the monastery its name is still produced on site. This is a hotel for people who want the Austrian Alps with substance rather than spectacle: the trails, the cross-country skiing, the spa, the food, and the particular pleasure of a building that has been doing this for centuries and shows no signs of urgency about anything. The short version: Ninety rooms in a 500-year-old monastery in the centre of Seefeld, owned by the same family for over two centuries, with eight saunas, a rooftop pool, nine dining locations, and the most characterful interior in the Tyrolean Alps.

Dining here stretches across eight distinct locations, including a wine cellar and an in-house brewery, reflecting the hotel's long culinary tradition. The varied settings let guests move from a gourmet dinner to a cellar tasting or a lively evening at the on-site nightclub without leaving the property.
