Where most Saint-Tropez hotels look back toward the sixties with varying degrees of nostalgia, Hotel Sezz arrived with a different proposition: a single-storey compound designed by Christophe Pillet as a study in contemporary minimalism, softened by local materials and the kind of careful landscaping that makes the vegetation feel like it was always there. Thirty-five rooms and two villa-style suites, each conceived as a cocoon, open through five-metre French windows onto private terraces enclosed by greenery, with outdoor showers and, in some rooms, private plunge pools. The palette is white, warm grey and saffron, with mustard carpets and red light fixtures introducing a note of boldness against the Provençal backdrop. The Michelin-starred restaurant Colette, named after the writer who spent time on the peninsula, is run by chef Philippe Colinet with a Mediterranean and locavore sensibility, and the Le C bistro handles the more informal poolside hours. The bar is a partnership with Dom Pérignon, which means the champagne is never incidental, and in high season a DJ holds the pool deck from early evening. The Spa Sezz by Cinq Mondes has a secret garden reserved for sunrise and sunset yoga, alongside a hammam, jacuzzi and two treatment rooms. A free shuttle runs to the centre and to Pampelonne, though Canebier beach is walkable from the gate. This is a hip hotel for people who want Saint-Tropez with their privacy intact, close enough to the circus to dip in and out, far enough to sleep through it. Ask for a Cocoon with a plunge pool

Only three of the 35 rooms have a private heated plunge pool alongside the outdoor shower and terrace. The difference in how you use the room, and how little you need to leave it, is worth the upgrade. Request it at booking.

Colette on a weeknight, Le C by the pool for lunch

The Michelin-starred kitchen is at its most focused Tuesday to Thursday when the room is quieter and the tasting menu gets the attention it deserves. Le C is the more relaxed address for a long lunch without the obligation of a full evening.
