THE PINK NOTEBOOK VERDICT
Hotel Le Pigonnet
A few minutes' walk from the Cours Mirabeau, Hotel Le Pigonnet sits behind a hundred-year-old bastide and a mediterranean garden of a full hectare; Cézanne is said to have had a privileged view of Sainte-Victoire from here, and Barbara, Serge Gainsbourg, Juliette Gréco and Clint Eastwood all stayed too. The hotel keeps things small: forty-five rooms across two floors, so nobody gets lost in a corridor, and rooms carry a bathrobe, slippers and a flat-screen TV as standard, with more depending on category, meaning this suits someone after character over checklist luxury, not someone counting square metres or minibars. Outside, the pool runs from May to October, ringed by pines and parasols, and cicadas provide the soundtrack; a pétanque court sits in the garden's shade for anyone who wants to play a round with a stranger. La Table du Pigonnet, decorated by Jacques Garcia, serves Provençal cooking from chefs Thierry Balligand and Fabien Torrente, while the ground-floor Rose Bar, named for a former owner, pours vintage cocktails and runs a daily chocolate hour. A spa called Folie Verte, a fitness room, and electric bike rental cover the rest of the day. None of this suits anyone chasing a modern tower with a rooftop bar and city views: this is a garden hotel, low-rise, quiet, walking distance to the old town rather than in the middle of it. What no other hotel in central Aix offers is that garden itself: twenty-nine working fountains among pines older than most of what surrounds them, worth the walk on its own. A hundred-year-old bastide behind one of Aix's most emblematic gardens, five minutes from the Cours Mirabeau, with a private pool open May to October and a pétanque court under the pines. It suits travelers after atmosphere and history over glass and gloss, not those wanting a modern high-rise view.

La Table du Pigonnet pairs a dining room designed by Jacques Garcia with Provençal cuisine from chefs Thierry Balligand and Fabien Torrente, built around close relationships with regional producers and an extensive regional wine list. It reflects the house's long-running identity as a gathering place for Aix-en-Provence.
