THE PINK NOTEBOOK VERDICT
Chateau de la Gaude
Château de la Gaude sits among vineyards five kilometres outside Aix-en-Provence, an eighteenth-century bastide classified as a historic monument, opened as a hotel in 2019 under the Relais & Chateaux flag with only twenty-five rooms. The estate still makes its own wine, with vines and a working cellar on site, and dinner at Le Art comes from chef Matthieu Derible, who earned a Michelin star within six months of opening and still cooks a seasonal menu shaped by the terroir. Beyond that there are three more kitchens: Le K, a Japanese-Provençal brasserie where Joana Vasconcelos's Lilicoptère sculpture presides over the dining room, plus La Source and L'Atelier. The spa, set in the former stud farm, has a heated outdoor pool kept for hotel guests only, a hammam and sauna in open access, and private yoga or pilates on request. Rooms range from compact standard cottages to a duplex suite with its own sofa area, each individually decorated with a minibar, bathrobe and safe. This suits a couple or a small group planning a slow few days around food, wine and quiet rather than sightseeing on foot; the property is a drive from Cézanne's studio and Saint-Sauveur Cathedral, not a stroll. It is less suited to anyone wanting to walk out the door into old Aix, or travelling on a budget that a Michelin table and a working vineyard don't fit. What sets it apart from other luxury addresses in Provence is that combination: a twenty-five-room house that grows its own wine, runs four restaurants, and already holds a Michelin star, rather than the usual one restaurant and a wine list. An eighteenth-century bastide outside Aix-en-Provence that grows its own wine and runs four restaurants, including a Michelin-starred table under chef Matthieu Derible. Twenty-five rooms, a heated pool reserved for guests, and a hammam open to all. It rewards a slow stay built around food and wine, not sightseeing on foot.
