THE PINK NOTEBOOK VERDICT
Hotel Greystone
On 20th and Collins Avenue in Miami Beach, Hotel Greystone occupies a 1939 art deco building that emerged from a $65 million renovation with its ziggurat lines intact and its systems modern. This is a 91-room, adults-only address, open only to travelers 21 and over except for guests using the Kobo grab-and-go café, so families with children have no reason to book here. Breakfast at Kobo is a fresh pastry and coffee, taken standing or carried up to the rooftop, where the pool looks out over Collins Avenue and the Atlantic beyond. Dinner runs through Sérêvène, a French-Japanese room where Executive Chef Pawan Pinisetti pairs rotisserie technique with izakaya ingredients, and the Greystone Bar keeps the later hours with cocktails and, past a door most guests miss, a hidden speakeasy that no comparable South Beach boutique offers. Guests get full beach access with two loungers and towels, an outdoor and rooftop pool, valet parking, a fitness room, and a doctor on call if the sun proves stronger than planned. Pets travel, for a fee. The location suits anyone who wants to walk out the door and be inside the Art Deco Historic District, near the Bass Museum and the Convention Center, without queuing for a rideshare. It does not suit anyone hunting a family resort, a spa retreat, or a quiet week away from other guests: this is a hotel built around its bars and its rooftop, and it reads that way from check-in. A $200 incidental deposit applies at arrival. What stays with a guest afterward is less the design than the sense that the hotel knows exactly what kind of night it is offering. Hotel Greystone is a 91-room, adults-only art deco hotel on Collins Avenue, rebuilt around Sérêvène's French-Japanese kitchen, a rooftop pool, and a speakeasy most guests never find. It suits couples and solo travelers who want South Beach nightlife within walking distance, not families or anyone after a quiet retreat.
