In Alto Agrelo, seventeen kilometers outside Lujan de Cuyo's center, this sixteen-room resort is built low against the vines, its walls raised in reed, mud, thatch and stone by local artisans, in a shape the Huarpe people used centuries ago. The One and Two Bedroom Chozos each open onto a private terrace facing the Andes, with a Stoker mini pool and 90 to 140 square meters of space for a kitchen and living room, not just a bed. The resort sits inside Dragonback Estate, 820 privately owned hectares of vineyard that the property describes as the largest vineyard estate in the world, a scale no comparable resort nearby can match. Days are built around the land: walking or riding through the vines, a fire ritual with wine at dusk, a mate lesson, a tasting at Bodega Cuarto Dominio, or a treatment at the spa. Chef Diego Salvador runs Barro Cocina on reservation only, shaping seasonal ingredients around fire, part of a resort that holds a Michelin Key. There are no elevators here, since the property has no multiple floors to navigate, which suits couples and slow travelers more than families juggling strollers or groups wanting a busy lobby to gather in.
