THE PINK NOTEBOOK VERDICT
Hotel Union Øye
Fires are lit in the Sitting Room by early evening, and after dinner the talk turns to who slept where: the king, the queen, the mountaineer who mapped the peaks outside. Every room at Union Øye, in the main building and the garden houses, is named after the notable who once stayed in it, and this documented history, not a marketing line, is the thing this fjord hotel has that its peers along the coast do not. It has been standing in the hamlet of Øye since 1891, built for a slower kind of travel: long books from the alpine library, walks that start at the front door, a nightcap and old stories in the historical living room. The Conservatory runs a seasonal menu, the sommelier opens the wine cellar Tuesday to Saturday, and outside there is a fjord-side sauna, kayaking on the still water of the Norang fjord, and snorkeling through a flooded village at Lygnstøylsvatnet. Union Øye is also a certified Miljøfyrtårn green hotel, growing its own herbs and vegetables, letting the meadows run wild between buildings, and keeping goats to graze the forest edge instead of machinery. Rooms range from a compact Classic to Torestova, which sleeps eight across a double and two singles, and the Garden Junior Suite at 431 square feet with a king bed. This is a place for people who read, hike, and don't need a schedule filled in for them; anyone wanting nightlife, a pool deck, or a full-service resort should look elsewhere. What stays with you afterward isn't the view, though the fjord earns its reputation, but the sense that the walls have been listening since 1891 and are still willing to talk. Union Øye has named every room after the explorer, monarch, or writer who once slept there since 1891, paired it with a fjord-side sauna, alpine library, and its own goats. It rewards readers and hikers, not anyone chasing nightlife.
