The southwest coast of Sicily is not where most people go, which is the first thing worth knowing about the Adler Spa Resort Sicilia. The Valley of the Temples at Agrigento is thirty minutes south, the Scala dei Turchi, a white marlstone cliff formation above a turquoise sea, is twenty minutes along the coast, and the Torre Salsa Nature Reserve, 760 hectares of wetlands, chalk outcrops, and undeveloped dunes, begins at the hotel's perimeter. The resort opened in 2022 on a clifftop above the reserve's private beach, built from Sicilian clay, volcanic rock from Etna's foothills, and sustainable cedarwood, with the kind of considered materiality that earns the term sustainable without needing to announce it. The 90 rooms and suites are arranged in low-profile single-storey blocks across the grounds, each with a private terrace looking over the Mediterranean or the gardens, and interiors in warm Sicilian tones of burnt orange and ochre, cedar panels, and floors of opus signinum, crushed brick and mortar in the Roman tradition. The spa runs to 3,200 square metres: a 25-metre sports pool, a saltwater hydromassage pool, a thalasso pool, three Swedish saunas, and a rooftop whirlpool with the horizon in every direction. The kitchen, led by Sicilian chef Giuseppe Schimmenti, works entirely from the estate's organic garden and local suppliers, the produce changing with what the land offers that week, and the half-board offer, which includes breakfast and a gourmet dinner, is the right way to approach a stay here. This is a resort for people who want the western coast of Sicily without the tourist infrastructure that the eastern coast carries, and who want a spa and a beach and a landscape rather than a programme of excursions. The Valley of the Temples, one of the great Greek archaeological sites in the world, is reason enough to base a week in this part of the island.
