THE PINK NOTEBOOK VERDICT
Hotel Signum
Salina is the greenest of the Aeolian Islands, which in an archipelago of volcanic rock and sea is a distinction worth making. Where Stromboli smokes and Panarea preens, Salina grows capers and Malvasia grapes and has the quiet confidence of an island that does not need to compete. Hotel Signum is in the village of Malfa, on the northern coast, a restored Aeolian hamlet of whitewashed buildings and tiled terraces connected by bougainvillea and lime trees, with Stromboli and Panarea visible across the water and the Gulf of Malfa below the terrace in the evenings when the light does what Aeolian light does. The 30 rooms are each named after a plant of the island, caper, thyme, rosemary, artemisia, and individually furnished with antique Sicilian pieces, majolica details, and the kind of simplicity that takes confidence to maintain at a hotel of this calibre. The Michelin-starred restaurant, led by Martina Caruso, one of Italy's few female starred chefs, is the most compelling reason to stay: dishes built entirely around Salina's exceptional larder, the capers, the anchovies, the almond milk, the Malvasia, with technique that serves the ingredient rather than announcing itself. The Salus per Aquam spa takes its cues from the island's geothermal traditions, thalassotherapy pools in a lemon grove, a hammam, treatments using botanical products from the hotel's own garden. The infinity pool, the bar where Raffaele Caruso mixes cocktails with the garden's herbs, the library, the three terraces: none of it feels like amenities. It feels like a house. This is a hotel that guests return to year after year, which is the most useful information about it. Salina opens seasonally from March through October, and the weeks either side of August, when the island is most itself, are the ones to book. The short version: Thirty rooms in a restored Aeolian hamlet in Malfa, with a Michelin-starred restaurant led by Martina Caruso, a geothermal spa in a lemon grove, and the most compelling view of Stromboli in the archipelago. The best hotel on Salina, and not by a small margin.

The Suites in Villa occupy a private corner of the property, converted from an old Aeolian farmhouse whose wooden-beamed ceilings and original architectural elements were preserved during a conservative restoration. Each roughly 60-square-metre suite blends antique Sicilian and Aeolian furnishings with European-collected decor pieces.
