The estate is built around something no ordinary countryside hotel has: a working acetaia, the ancient cellar where Traditional Balsamic Vinegar of Reggio Emilia PDO ages in rows of wooden casks. Sisters Cristina and Silvia Crotti run it as an all-female company, and guests can walk the cellar, taste the vinegar in its purest form, and buy bottles from the shop before they leave. The residences sit inside a centuries-old park, and each room is named for a rose or flower rather than a number: Boule de Neige, a pure white Bourbon rose, sits alongside Gertrude Jekyll, Dark Lady, Reine des Violettes, Ortigia, Cortina, Dalia and La Piccolina. A seasonal pool runs from June to September, and an elevator serves guests who need help reaching the upper floors. Check-in starts at 2pm, check-out is 10:30am, and Italian regulation caps cash payments here at EUR 2,999.99, worth knowing before arrival. A cleaning tax is billed separately, and travelling with a dog adds a EUR 10 daily fee. This suits someone who wants two or three unhurried days organised around a single craft, who would rather learn how vinegar is aged than lounge by a rooftop bar.
