THE PINK NOTEBOOK VERDICT
Argos in Cappadocia
Argos in Cappadocia sits inside a restored village in Uçhisar, its 51 rooms carved into a cluster of caves, a former chapel, a caravanserai and a mill house that the property spent years bringing back to life before opening in 2010. Everything is on one floor, so guests move between the spa, the garden and the heated outdoor pool without a lift in sight, and cave rooms come with their own fireplace for cooler nights. What sets this address apart is underground: a wine cellar carved into the rock holds close to 25,000 bottles, feeding both Nahita, its Anatolian kitchen built on recipes gathered from Cappadocia's own farms, and Seki, where an international menu and certified sommeliers work from produce grown within 60 kilometres, much of it in the hotel's own garden. The pool stays open through winter, looking out over Pigeon Valley and Erciyes Mountain, and the hotel's Türkiye Sustainable Tourism Program certification shows in details like rainwater recycling and a no-plastic policy across guest amenities. Families travelling with children will find a kids' pool, babysitting and connecting rooms on request, while couples take the cave suites with their own fireplaces. Anyone who wants a lift, a high floor with a view, or a fast turnover lobby scene should look elsewhere; this is a single-storey property built around slow dinners and long walks through the valley below. Check-in runs from 3pm, checkout by noon, and an airport transfer can be arranged in advance. It is not a hotel for passing through. It is one for staying still in, glass of Cappadocian wine in hand, while the fairy chimneys outside change colour with the light. A restored cave village in Uçhisar with a wine cellar holding close to 25,000 bottles, two kitchens working from a hotel garden and a 60-kilometre radius, and a heated pool that stays open all winter over Pigeon Valley. One floor, no lift, built for slow dinners rather than sightseeing loops.

Argos's outdoor pool is heated and open year-round, letting guests swim while looking out over the wider Cappadocia valley below. Positioned to capture views of the surrounding rock formations, the pool is one of the hotel's signature wellness features, alongside a spa and gym housed within the same historic complex.
