THE PINK NOTEBOOK VERDICT
Koza Cave Hotel
Coffee at the window here comes with the whole of Goreme laid out below, a cave-cut hotel in the middle of a Cappadocia town built into rock. Koza Cave Hotel has ten rooms only, each carved and finished differently, from a queen room with its own rooftop terrace and hot tub for sunrise, to garden-view suites with sizes running from 194 to 538 and beds either full doubles or twins. What sets it apart from the valley's other cave conversions is its owner, Deriş, who spent decades in Holland and brought that country's eco-sensibility home: grey water gets reused, furniture is handcrafted locally from recycled materials, and the hotel describes itself as the first ecological family-run hotel of its kind. That ethos shows in small, practical ways too, a doctor on call, a library for slow afternoons, bikes and hiking arranged on site, and staff who switch between English, German and Turkish without missing a beat. There is no elevator, so the cave stairs are part of the deal, and this is not a fit for families since children eleven and under are not permitted. It suits travellers who want the region's geology without the resort gloss, readers who'd rather sit with a book on the terrace than queue at a buffet, though breakfast, a snack bar and bottled water are all covered. Airport transfer, car rental and a licensed in-house travel agency cover the practical side of a Cappadocia trip, so the planning stays out of your hands once you've checked in. Book the rooftop hot tub room only if sunrise over the town is the whole point of coming here. Koza Cave Hotel is a ten-room cave conversion in Goreme built on Dutch eco-principles, from reused grey water to locally handcrafted furniture. One queen room has its own rooftop hot tub for sunrise over the town. No elevator, and children eleven and under aren't allowed.
