THE PINK NOTEBOOK VERDICT
Zaborin
Each of Zaborin's fifteen suites, set deep in the Hanazono woods above Kutchan on Hokkaido's Niseko side, opens onto its own private indoor and outdoor onsen, filled from a natural hot spring that runs beneath the building. That is the one detail most nearby guesthouses cannot claim: nobody here shares a bath or books a time slot for one. Zaborin calls itself a ryokan rather than a hotel, and the kitchen follows that logic. Chef Yoshihiro Seno, a Hokkaido native, builds a multi-course kita kaiseki dinner around whatever the coast and surrounding farmland have given up that week, served in a quiet dining room rather than a restaurant floor. Beyond the suites there is a library stocked for slow afternoons, a spa and massage room, a conference hall for the rare guest mixing business with the trip, and a bar. Staff speak English and Japanese, arrange airport transfers, and keep ski storage for anyone here for Niseko's snow rather than the baths. Parking is offsite, and reservations are required in advance. Children twelve and under are not permitted, so this suits couples and solo travelers more than family groups, and anyone chasing a lively bar scene or a busy lobby will find the quiet a little pointed. What lands, in the end, is simple: a hot spring of your own, a few steps from the bed, answering to nobody else's schedule. Fifteen suites in the Hanazono woods near Kutchan, each with its own indoor and outdoor onsen fed by a natural hot spring underneath the building. Kaiseki dinners, a library, a spa room, and staff who handle the ski logistics. Children twelve and under are not permitted.

Zaborin's exterior is finished in offcut timber treated with the traditional yakisugi charring method and coated using a byproduct of coal production. The result is a naturally waterproof, durable façade made from recycled materials, part of the ryokan's stated ongoing effort to limit its impact on the surrounding Hanazono forest and grounds.
Ski and golf equipment lockers are available near the entrance.
