THE PINK NOTEBOOK VERDICT
Araya Totoan
At Araya Totoan, mornings start with steam over one of three separate bathhouses, each filled by around 100,000 litres of hot spring water pumped daily straight from a source only a few dozen metres underground, unblended and untreated, the highest volume of any inn in Yamashiro Onsen. The same family has run this Kaga guesthouse for eighteen generations, more than 800 years, and the pedigree shows: in the early twentieth century the artist Rosanjin stayed here often enough that some of his work still hangs on the walls, and one detached guest building, originally built without a single nail for an imperial visit in the Meiji era, was reopened in 2023 as a private suite with its own hot-spring bath. Rooms mix tatami and low beds, half open-air tubs fed by the same source, and quiet views of a garden that changes with the seasons; a small conference hall and bar sit alongside a restaurant serving seasonal, locally sourced meals. None of this suits anyone wanting a 24-hour front desk or a downtown base, since reception hours are limited and the property sits about 4 kilometres from central Kaga, reachable by an arranged train-station transfer with notice. Travellers with pets should also look elsewhere, since none are allowed. But for someone who wants a soak scarcely changed since the water was traced to this ground, and a kitchen built around what is locally in season, the seventeen rooms across six floors carry more history than their footprint suggests. Free Wi-Fi and a small spa cover the basics, though the real draw is what comes out of the ground, not what gets added to it. Araya Totoan is a 17-room hot-spring guesthouse in Kaga's Yamashiro Onsen, run by one family for eighteen generations, where about 100,000 litres of spring water reach the baths daily straight from the source. It suits an unhurried soak and seasonal meals, not a 24-hour desk or a downtown base.

Named Ochin, this room once hosted generations of the Daishoji domain's lords and was a favorite retreat of the artist Rosanjin; it was relocated into the inn during a renovation, making it the property's oldest guest room. Lacquered pillars and Kaga's distinctive vermilion walls set a quietly historic mood, with a tatami sleeping area and a two-tiered semi-open-air bath fed by the spring.
