Hilton Molino Stucky Venice Hotel

On the western tip of Giudecca, facing the wide sweep of open water toward the Zattere, the Hilton Molino Stucky Venice occupies a flour mill built between 1884 and 1895 by Giovanni Stucky, a Swiss-Venetian industrialist born in 1843, who commissioned the German architect Ernst Wullekopf to raise thirteen buildings of red brick and pointed Gothic arches on the site of two former convents, San Biagio and Cataldo. At its height the mill produced flour and Stucky's own Super Pasta under one roof and employed some 1,500 workers, before decades of decline ended in closure in 1955 and near total abandonment. The Società Acqua Pia Antica Marcia bought the complex in 1994, began restoration in 1998, survived a fire in April 2003 that gutted the tower and much of the centre block, and reopened the building in partnership with Hilton on the 1st of June 2007 as a 379-room hotel and conference centre, still the largest hotel in Venice by room count. The restoration kept the industrial bones legible: original wood beams, iron columns and brick vaulting run through the lobby, corridors and a number of suites, set against a Venetian decorative layer of striped fabrics, chandeliers and Murano glass detailing. Food is split across four outlets: Il Molino for breakfast, Aromi for a more considered Italian menu, Bacaromi for cicchetti, and Rialto for lighter meals, with the Skyline Rooftop Bar on the eighth floor pouring cocktails from the highest point in the city. Above the restaurants, the rooftop terrace holds the only hotel swimming pool in central Venice, open through the summer, alongside the eforea Spa, one of the larger wellness facilities in the city, with sauna, Turkish bath and a full run of treatment rooms. At 379 rooms, plus fourteen meeting rooms built to seat up to a thousand delegates, this is Venice at industrial scale, closer in spirit to a well-run hospitality operation than to the six-suite palazzo conversions the rest of the city trades on. The compensation is space: rooms here run larger than almost anything on the Grand Canal, service follows a corporate standard rather than a personal one, and the short run across the Giudecca Canal on the hotel's own shuttle buys a quiet that San Marco has long since lost. People come here for the view of Venice from a slight remove rather than for a room inside its narrowest streets, and for practical comforts, a pool, a spa, four restaurants, that few historic hotels in the centre have room to offer. You should not come if you want to step out of your hotel directly into Piazza San Marco, or if a six-suite palazzo with a family living upstairs is what you're after; the shuttle boat, the walk through Giudecca's quieter streets, and a steady flow of conference groups and wedding parties are all part of daily life here, and it rarely feels like a private find. You should come for a piece of Venetian industrial history handled with real care, for a room with proper space and a working bathroom, and for a rooftop that puts the whole city, domes, campanili and the lagoon beyond, at a comfortable distance below you.
